Is It Worth Eating An Omelet Without Egg Yolks To Protect Your Heart?

Nutritionists have provided an answer.

Some people believe that an omelet made only with egg whites is healthier than regular eggs. But the yolk isn’t just a source of cholesterol—it also contains most of the vitamins, minerals, and other beneficial nutrients found in an egg, according to nutritionists the website of renowned lifestyle expert Martha Stewart.

Egg whites are a source of high-quality protein that is low in calories and virtually fat-free,” says dietitian Michelle Rutenstein.

Egg whites consist mainly of water and protein, as well as small amounts of other nutrients. They contain no cholesterol and very little fat. One large egg white contains 3.5 to 4 grams of protein. A large whole egg contains about 6–7 grams of protein. However, the egg white lacks most of the nutrients found in the yolk.

“The egg yolk contains most of the egg’s nutrients, including choline, vitamin B12, vitamin D, selenium, iodine, iron, as well as the carotenoids lutein and zeaxanthin,” says Rutenstein. The yolk also contains nearly all of the egg’s trace minerals.

Cholesterol Content

Egg whites contain no cholesterol, unlike the yolk. But dietary cholesterol isn’t as bad for the cardiovascular system as was previously thought. “In fact, dietary fats are more important than dietary cholesterol,” says dietitian Susan White. In particular, saturated and trans fats have a much greater impact on blood cholesterol levels than dietary cholesterol itself.

This does not mean that dietary cholesterol is irrelevant for everyone. Some people may be more sensitive to it than others.

Should you cut out the yolk?

If you’re generally healthy and enjoy eggs, there’s no compelling nutritional reason to regularly discard the yolk. “For most people who eat eggs in moderation (up to one a day), switching to egg whites offers negligible, if any, cardiovascular benefits,” says White. Rutenstein agrees. She views egg whites as another nutritional tool: they can provide additional protein without a significant increase in calories, fat, or cholesterol.
